Ingredients

  • 1 whole chicken (about 1.3 kg, ready to cook)
  • Salt
  • freshly ground pepper
  • 3 cloves garlic
  • 4 tbsp olive oil
  • 2 Bay leaves
  • 6 sage leaves
  • 375 ml red wine
  • 2 carrots
  • 250 g blue grapes
  • 3 pickled chili peppers (from the jar)
  • 1 tbsp balsamic vinegar
  • 100 g green olives

Instructions

    Rinse and pat dry the chicken. Cut into portions with poultry scissors. Rub the meat with salt and pepper. Peel the garlic and slice it.

    Heat olive oil in a roasting pan. Brown the chicken pieces, garlic, and herbs in it. Pour in red wine and roast in a preheated oven at 180°C (gas: level 2-3, fan: 160°C) for 45-50 minutes.

    Peel the carrots and slice them. Rinse the grapes and pluck off the stems. After 25 minutes add the carrots and chili peppers to the pan and mix.

    Add vinegar, grapes, and olives to the chicken, stir in, and heat everything in the oven for another 10 minutes. Season with salt and pepper.
