Chicken with French Fries

Ingredients
- 2 whole roasted chickens (about 1 kg each)
- Salt
- black pepper (freshly ground)
- 80 g Butter
- 1 tbsp honey
- 1 tbsp paprika powder (spicy)
- 800 g waxy potatoes (all medium-sized)
- vegetable oil (for frying)

Preheat the oven to 180°C with fan and top heat.

Rinse the chickens and pat dry. Season the inside with salt and pepper. Melt the butter with honey in a small pot. Mix in paprika, salt, and pepper, then brush all over the chickens. Place them breast-side up on a rack (fat pan underneath) and roast for 50-60 minutes. Occasionally baste with the butter mixture.

Wash, rinse, and cut potatoes into finger‑thick sticks using a mandoline. Rinse the sticks in cold water, drain on kitchen paper, and pat dry.

Heat enough oil in a pot to about 160°C. Fry the fries in batches with a slotted spoon for 3-4 minutes until pale yellow. Drain on kitchen paper, cool, and fry once more at about 180°C for 2-3 minutes until golden brown and crisp. Drain again on kitchen paper; keep warm in a low oven if desired.

Just before serving, season the fries with salt and serve each portion with half a chicken.
