Chicken Stew with Pears and Beans for the Thermomix®

Try the delicious chicken stew with pears and beans for the Thermomix® by Spoonsparrow!

Ingredients

  • 300 g Chicken breast fillet (2 Chicken breast fillets)
  • Salt
  • Pepper
  • 1 onion
  • 2 cooking pears
  • 0.5 lemon
  • 1 Tbsp oil (e.g., sunflower oil)
  • 2 juniper berries
  • 1 bay leaf
  • 200 g green beans (fresh or frozen)
  • 150 ml Classic Vegetable Broth
  • 0.5 bunch Parsley
  • 30 g walnut kernels (2 tbsp)

Instructions

  1. 1.

    Chop walnuts 5 sec / level 6. Transfer. Wash parsley, shake dry, pluck leaves and chop 3 sec / level 8. Transfer, rinse and dry the mixing bowl.

    Peel, halve onion and put in the mixing bowl. Pulse 5 sec / level 5. Use the spatula to scrape everything from the sides of the bowl downwards. Add oil, sauté 3 min / 120 °C / level 1.

    Meanwhile rinse chicken breast fillets under cold water, pat dry with kitchen paper and cut into about 2×2 cm cubes. Season with salt and pepper. Put chicken in the mixing bowl and simmer 5 min / 120 °C / counter‑clockwise / gentle stir without measuring cup.

    Wash pears, dry, halve and quarter. Remove core. Squeeze half a lemon. Wash and trim fresh beans. Add juniper berries and bay leaf to the chicken. Cook another 2 min / 120 °C / counter‑clockwise / gentle stir without measuring cup.

  5. 5.

    Add pears and beans. Simmer 1 min / 120 °C / counter‑clockwise / level 1 together. Pour in lemon juice and vegetable broth and cook everything over medium heat for about 15 min / Varoma / counter‑clockwise / gentle stir. Transfer the stew. Sprinkle walnuts and parsley on top.
