- 1 l chicken broth
- 400 g Hokkaido pumpkin
- 400 g potatoes (starchy)
- 4 Spring Onions
- 2 carrots
- 1 tbsp thyme leaves
- Salt
- Pepper (freshly ground)

Core the pumpkin, peel it, and dice.

Peel the potatoes and dice them as well.

Wash, trim, and slice the spring onions into thin rings.

Peel the carrots and cut them into thin slices.

Bring the broth to a boil and add all the vegetables. Cover and simmer gently for about 15 minutes. Finally add thyme and season with salt and pepper.
