Chicken Soup with Pak Choi and Mu-Err Mushrooms

Ingredients

  • 300 g Turkey breast fillet
  • 2 small stalks leeks
  • 1 stem pak choi
  • 1 piece ginger (about 3 cm)
  • 50 g dried Mu-Err mushrooms
  • 1 tbsp oil
  • 750 ml broth
  • 1 tbsp soy sauce
  • 1 tbsp rice wine
  • Salt

Instructions

    Wash and pat dry the turkey breast fillet, then cut into bite-sized strips.

    Clean, wash, and cut the leeks into 2 cm pieces.

  3. 3.

    Wash the pak choi, trim it, remove the stem, and slice into strips.

    Peel the ginger root and finely chop or grate it.

  5. 5.

    Soak the Mu-Err mushrooms in lukewarm water for about 20 minutes.

    Heat oil in a large pot. Briefly sauté the leeks, pak choi, ginger, and mushrooms. Add broth and let the vegetables simmer on low heat for about 10 minutes. Then add the meat and simmer for another 5 minutes. Season the soup with soy sauce, salt, and rice wine.
