Chicken Schnitzel with Zucchini Strips

Ingredients

  • 700 g Chicken breast fillet (4 chicken breast fillets)
  • 2 Garlic cloves
  • 2 sprigs Rosemary
  • 4 sprigs thyme
  • 4 tbsp olive oil
  • 0.5 lemon (juice)
  • Pepper
  • 1000 g zucchini (4 zucchinis)
  • 10 g basil (0.5 bunch)
  • Sea salt
  • 160 g tomatoes (2 tomatoes)

Instructions

    Rinse chicken under cold water, pat dry and cut crosswise so the breast can open up. Then thinly pound.

    Peel garlic and finely chop. Wash rosemary and thyme, shake dry and chop. Mix 2 tbsp olive oil with half the garlic, lemon juice, rosemary, thyme and pepper. Layer meat in a baking dish or similar tall pan and pour over the dressing. Cover and let marinate for at least 3 hours.

    Wash zucchini, trim and slice lengthwise into about 3 mm thick strips. Wash basil, shake dry and finely chop leaves. Mix with remaining oil, garlic, salt, pepper and zucchini; let sit for about 3 hours.

    Briefly blanch tomatoes in boiling water, shock in cold water, peel, quarter, core and dice. Season lightly with salt.

    Remove chicken from the marinate, season and grill or cook in a preheated grill pan on both sides for about 2 minutes each side.

    Sauté zucchini with the remaining dressing in a pan over medium heat for about 2 minutes until just tender. Plate on four warmed plates, arrange halved chicken fillets decoratively on top and garnish with tomato cubes.
