Chicken Salad with Avocado and Crispy Croutons

Ingredients

  • 2 slices white bread
  • 7 tbsp sunflower oil
  • 4 chicken breast fillets (about 120 g each)
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp White Wine Vinegar
  • 1 tbsp Lemon Juice
  • 3 tbsp freshly grated Parmesan
  • a pinch of sugar
  • 200 g leafy salad (e.g., romaine)
  • 1 Avocado

Instructions

    Drain the white bread, dice it and fry in 2 tbsp hot oil for 2-3 minutes until golden brown and crispy. Let drain on kitchen paper.

    Rinse the chicken breasts, pat dry and cut into strips or cubes. Fry in 1-2 tbsp hot oil for 2-3 minutes until golden brown. Remove from heat and let rest to finish cooking. Season with salt and pepper.

    Whisk the remaining oil with vinegar, lemon juice and 2 tbsp Parmesan. Taste and adjust with sugar, salt and pepper.

    Rinse the leafy salad, dry thoroughly and tear into bite-sized pieces. Peel the avocado, halve it, remove the pit and slice into thin wedges.

    Arrange the leafy salad on plates. Distribute the chicken over it and drizzle with the dressing. Sprinkle with croutons and a little Parmesan before serving.
