Ingredients

  • 300 g chicken liver
  • 1 tbsp flour
  • 2 shallots
  • 2 Garlic cloves
  • 2 Tomatoes
  • 50 g Parma ham
  • 2 tbsp butter
  • 6 sage leaves
  • 20 ml sherry
  • 100 ml chicken broth
  • Salt
  • Pepper (freshly ground)

Instructions

    Peel the shallots and slice them into strips.

    Peel the garlic and cut it into thin slices.

    Briefly blanch the tomatoes, cool, peel, quarter and seed them.

    Slice the ham into strips.

    Wash, clean, and pat dry the liver. Coat in flour and brown in hot butter. Remove and sauté shallots and garlic in the drippings. Deglaze with sherry and broth, reduce briefly. Add ham, tomatoes, sage, and liver; simmer on low heat for 2–4 minutes until pink. Season with salt and pepper and serve with baguette if desired.
