Ingredients

  • 4 onions
  • 2 Apples
  • 1 tbsp plant oil
  • 4 tbsp butter
  • 100 ml dry white wine
  • 4 slices chicken livers
  • 4 tbsp flour
  • 4 tbsp clarified butter
  • 4 Sage leaves
  • Salt
  • black pepper (freshly ground)

Instructions

    Peel the onions and cut them into thin rings. Wash the apples, quarter them, remove the core, and slice into thin strips. Heat the oil and butter in a pan and sauté the onion rings and apple strips for about 2 minutes, then deglaze with white wine and simmer on low heat for another 3 minutes.

    Wash the liver slices, pat dry with kitchen paper, remove any tendons or fat (if present) and lightly dust with flour. Heat clarified butter in a separate pan and brown the livers for about 2 minutes on each side. In the same pan, crisp the sage leaves. Season with salt and pepper. To serve, place the liver slices on top of the sautéed onion-apple mixture.
