Ingredients

  • 1 pre-cooked chicken (approx. 1.2 - 1.4 kg)
  • Salt
  • pepper (ground)
  • 1 untreated lemon (juice)
  • 2 tsp freshly grated ginger
  • 2 Garlic cloves
  • 500 g yogurt
  • 2 tbsp plant oil
  • 2 Tbsp paprika powder
  • 0.5 tsp ground cumin
  • 0.5 tsp Black pepper
  • 0.5 tsp chili powder
  • 0.5 tsp turmeric
  • 300 g long-grain rice
  • 1 tbsp fresh chopped coriander

    Wash the chicken, pat dry and cut into 6-8 pieces. Score the surface of each piece (about 0.5 cm deep) and place in a shallow dish. Sprinkle with pepper and salt and drizzle with lemon juice. Let marinate for about 30 minutes. Peel the ginger and garlic. Press the garlic through a press. Whisk yogurt with all spices to make the marinade. Generously coat chicken pieces with it and cover the dish with foil. Marinate in the refrigerator for 8 hours or overnight.

    Preheat oven to 180°C (356°F) with upper and lower heat. Place foil on a baking tray and arrange chicken pieces on top. Bake for 35-40 minutes, brushing occasionally with some marinade (about 1/4) and adding water if needed. Cook rice in 600 ml salted water.

    Heat the remaining marinade and add the chicken pieces. Let everything sit for another 5 minutes, sprinkle with coriander and serve with rice.
