Chicken drumsticks on chickpea vegetable in tomato sauce from Spoonsparrow is always wonderfully good.

Ingredients

  • 8 chicken drumsticks
  • Salt
  • Pepper
  • paprika powder
  • 3 tbsp olive oil
  • 1 can chickpeas
  • 1 can red beans
  • 3 Carrots
  • 2 onions
  • 4 stalks lovage
  • 1 stalk Celery
  • 1 Zucchini
  • 3 tbsp olive oil
  • 400 g crushed tomatoes
  • 0.5 tsp Sugar
  • Salt
  • Pepper
  • 8 small sausages
  • 1 Tbsp clarified butter

Instructions

    Preheat the oven to 200°C.

    Wash, pat dry and season the chicken drumsticks with salt, pepper and paprika powder, brush with oil and place in a baking dish. Bake for about 30 minutes until golden yellow.

    Meanwhile, drain and rinse the chickpeas and beans. Peel and dice the carrots. Slice the onion into thin slivers. Wash the lovage, shake dry, set aside some leaves for garnish and chop the rest finely. Set aside. Wash, trim, and cut celery and zucchini into sticks. Heat oil in a pan and sauté the vegetables; add the beans and chickpeas and pour over the crushed tomatoes. Add a little water if needed and simmer covered for about 8 minutes. Season with salt, pepper and sugar.

    Simultaneously, brown the sausages in a small pan with clarified butter all around.

    Distribute the vegetable mixture onto four plates, top with chicken drumsticks and sausages, garnish with lovage leaves and serve.
