- 0.5 bunch thyme
- 1 stalk Celery
- 1 medium carrot
- 1 medium onion
- 800 g clarified butter
- 1 kg chicken thighs
- Salt
- black pepper (freshly ground)
- 3 star anise
- 500 g wide green beans
- 1 bunch spring onions
- 1 head salad (Frisée or oak leaf lettuce)
- 1 tbsp Apple cider vinegar
- 3 tbsp Rapeseed oil
- 1 tsp Mustard

Whisk vinegar, oil, mustard, salt, and pepper together. Toss beans, spring onion rings, and salad in the dressing and spread on plates. Warm chicken confit, use a slotted spoon to lift meat from butter, drain well, and arrange atop the salad.
