Chicken Broth Preparation

Ingredients
- 1 whole chicken (ready to cook, about 1.2 kg)
- 2 carrots
- 200 g celery root
- 0.5 stalk leek
- 2 sprigs parsley
- 2 onions
- 0.5 tbsp sea salt
- 1 tsp peppercorns
- 2 Bay leaves

Wash the whole chicken thoroughly inside and out.

Wash, clean, or peel the vegetables. Rinse the parsley and shake dry. Quarter the onions with skins on, roughly chop the rest of the vegetables.

Place the vegetables and chicken in a pot and pour enough cold water to cover everything.

Add salt, peppercorns, and bay leaves, then bring the soup to a boil.

Once boiling, reduce heat and simmer gently for about 1½ hours on medium heat, skimming foam as needed. Add more water if necessary.

After cooking time ends, remove the chicken from the broth. Line a strainer with cheesecloth and strain the broth into another pot.

Optionally remove skin from the chicken meat, detach from bones, shred finely, and use as soup garnish.
