Chicken Breast with Zucchini-Mozzarella Filling

Spoonsparrow brings spring to the plate in a flash with chicken breast stuffed with zucchini and mozzarella.

Ingredients

  • Salt
  • Pepper (freshly ground)
  • 4 tbsp olive oil
  • 1 tsp Sambal oelek
  • 1 ball mozzarella (125 g)
  • 1 small zucchini
  • 1 tbsp olive oil (for frying)
  • 4 chicken breast fillets

Instructions

    Wash the meat, pat dry, cut a pocket along each breast lengthwise and season both inside and outside with salt and pepper. Mix the olive oil with Sambal oelek, brush the mixture over the meat, cover and refrigerate for 30 minutes.

    Meanwhile, drain the mozzarella and slice it. Wash and trim the zucchini, slice it, then sear in a hot pan with oil on both sides until crisp. Season with salt and pepper, then place mozzarella slices into the chicken breast pockets. Secure with toothpicks and grill over high heat, turning occasionally, for 10-12 minutes. Slice and serve on plates.
