Ingredients

  • 1 onion
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 500 g diced tomatoes (canned)
  • 50 g black olives
  • Salt
  • Cayenne pepper
  • 150 ml red wine
  • 2 tsp chopped rosemary leaves
  • 4 chicken breast fillets

Instructions

    Peel and dice onion and garlic. Clean, seed, wash bell pepper and finely dice it. Heat olive oil and sauté onion and garlic.

    Add tomatoes and red wine and simmer for about 10 minutes while stirring. Add olives and heat through. Season with salt, pepper and fold in chopped rosemary leaves.

    Season chicken breast fillets with salt and pepper. In hot oil cook each side for about 5 minutes. Plate chicken breast on the sauce with a touch of rosemary.
