Chicken Breast with Lemon and Spiced Vinaigrette

Ingredients
- 4 chicken breast fillets (about 150 g each)
- 150 ml chicken broth
- 3 tbsp olive oil
- 1 tsp cardamom pods
- 0.5 cinnamon stick
- 1 Garlic clove
- 2 slices ginger
- 1 dried chili pepper
- 1 tsp grated unprocessed lemon zest
- 1 pinch saffron strands
- 1 lemon (juice)
- Salt
- ground pepper
- mint (for garnish)
Instructions

Preheat the oven to 180°C (350°F).

Wash the chicken, pat dry and sear both sides in 1 tbsp hot olive oil for about 1-2 minutes each. Remove from pan and bake on a rack in the preheated oven for about 30 minutes.

Bring the broth to a boil, then remove from heat. Add cardamom, cinnamon, garlic, ginger, chili, lemon zest, and saffron. Let steep for about 5 minutes. Add lemon juice and remaining olive oil, season with salt and pepper.

Remove chicken from the oven, season, and slice diagonally into strips. Place in a bowl and pour the sauce over it. Serve immediately garnished with mint leaves or cover and refrigerate to serve cold.
