Chicken and Carrot Gratin

Ingredients
- 600 g chicken breast fillets (4 fillets)
- 400 g Carrots
- 2 onions
- 1 Garlic clove
- 0.5 lemon
- 30 g butter (2 tbsp)
- Salt
- Pepper (freshly ground)
- 150 ml chicken broth
- 200 ml heavy cream
- 150 g brie cheese

Rinse the chicken breasts and cut into bite-sized pieces.

Peel and cut carrots into ~5 cm sticks. Peel onions and garlic, finely chop them. Squeeze lemon juice and set aside.

Heat butter in a pan, then sauté onions until translucent. Add chicken and cook over medium heat for about 5 minutes on all sides. Add carrots and cook 2–3 more minutes. Stir in garlic, lemon juice, broth, and cream. Simmer for 5 minutes, season with salt and pepper, then transfer to a baking dish.

Slice the cheese and distribute it over the gratin. Bake in a preheated oven at 180 °C (160 °C fan) for 15 minutes until the cheese is melted and lightly browned.
