Cherry Muffins

Finally it’s cherry season: Cherry muffins from Spoonsparrow with fresh cherries are the perfect snack for in-between and come almost without added sugar.

Ingredients

  • 200 g sweet cherries
  • 1 organic lime (or ½ organic lemon)
  • 200 g wheat flour Type 1050
  • 2 tsp Baking powder
  • 100 g softened butter
  • 100 g unsweetened applesauce
  • 100 g coconut palm sugar
  • 1 egg
  • 100 g kefir

Instructions

    Wash, pit and roughly chop 150 g cherries. Rinse the lime hot, dry it, grate its zest finely and squeeze out the juice. Place a paper cup in each muffin pan cavity. Mix flour and baking powder.

    Cream butter with applesauce, coconut palm sugar, and egg. Add lime zest, 2 tbsp lime juice, and kefir; mix well. Stir in the flour mixture quickly, then fold in cherries. Fill each paper cup about two-thirds full.

    Bake in a preheated oven at 175 °C (fan 150 °C; gas: level 2) for 25–30 minutes until golden brown. Brush the muffins with remaining lime juice, let cool briefly, and remove from the cups. Serve well cooled cherry muffins garnished with fresh cherries.
