Cherry ice

Ingredients
- 500 g sweet cherries
- 5 egg yolks
- 40 ml cherry liqueur
- 100 g sugar
- 1 Tbsp vanilla sugar
- 200 g Cream cheese
- 200 g yogurt
- 2 egg whites
- 1 tbsp Lemon Juice
- 150 ml whipping cream

Line a loaf pan with plastic wrap.

Wash, pit and finely puree the cherries. Whisk the egg yolks with the liqueur, sugar and vanilla sugar over a hot water bath until creamy. Remove from heat and cool (best in a cold water bath). Gradually fold in the cream cheese with the yogurt. Stir in the cherry purée. Beat the egg whites with lemon juice to stiff peaks. Also beat the cream to stiff peaks and gently fold into the cherry mixture. Fold in the meringue. Pour the batter into the pan, smooth the top and cover with plastic wrap. Freeze for at least 5 hours.

About 10 minutes before serving remove from freezer. Then unmold, peel off the wrap and serve sliced.
