Ingredients
- 6 Boskop apples (peeled)
- 100 ml apple juice
- sugar
- Cinnamon
- 350 g horned noodles
- 200 g Appenzeller cheese (coarsely grated)
- 2 tbsp butter
- 1 onion
- 2 tbsp chopped parsley
- 200 g whipping cream
- Salt
- ground pepper

For the apple sauce, peel, quarter, core and roughly chop apples, then combine with apple juice in a pot. Simmer over low heat until apples break down. Season with sugar and cinnamon, then let cool.

Peel and dice the onion.

Cook horned noodles in plenty of boiling salted water until al dente, drain well and set aside.

Layer the noodles with grated Appenzeller cheese in a preheated bowl.

Sauté onion in butter, pour in cream, season with salt and pepper, stir in parsley, then spoon over the noodles.

Serve apple sauce separately alongside.
