Ingredients
- 100 g Parmesan (grated)
- 2 Eggs
- 100 g Soft Butter
- 100 g Ricotta
- 70 g flour
- pepper (ground)
- nutmeg
- 1 bunch arugula
- 2 tbsp Orange juice
- Salt
- pepper (ground)
- 2 tbsp olive oil
- 2 tbsp chopped walnut kernels
- 4 ramekins (or cups)
Instructions

Separate the eggs. Beat yolks with butter until fluffy, then stir in Parmesan and ricotta. Whisk egg whites to stiff peaks and fold in flour. Season with salt, pepper, and nutmeg. Fill greased ramekins and place them in a larger baking dish. Add hot water to reach halfway up the sides of the ramekins and bake in a preheated oven at 180°C for about 30 minutes.

Meanwhile wash, trim, and dry the arugula.

Mix orange juice with olive oil, salt, and pepper; taste and adjust seasoning.

To serve, pour the ramekins onto plates, arrange arugula beside them, drizzle with the sauce, and sprinkle walnuts on top.
