Cheese and Berry Salad

Ingredients
- 200 g broad beans
- Salt
- 250 g mixed salad (arugula, spinach; Lollo rosso and bionda)
- 200 g berries (blackberries, currants, and raspberries)
- 1 Red Onion
- 400 g halloumi
- 5 tbsp olive oil
- pepper (ground)
- 2 tbsp Apple cider vinegar
- 2 tbsp balsamic vinegar
- 1 tbsp Lemon Juice
- 1 tsp liquid honey

Wash, trim, and blanch the beans in salted water for 6-8 minutes. Cool, drain, and cut into small pieces. Wash, trim, dry, and tear the salad leaves. Rinse the berries, discard stems, and halve the raspberries. Peel, halve, and slice the onion into thin strips. Slice the halloumi and grill in a lightly oiled pan or on a hot grill for 3-4 minutes per side, seasoning with salt and pepper.

For the dressing whisk together the two vinegars with lemon juice, honey, 1–2 tbsp water, and remaining oil; season with salt and pepper.

Arrange the leafy greens with beans, onion, and berries on plates, top with halloumi slices, and drizzle with dressing before serving.
