Ingredients

  • 600 g Champignons
  • 3 Knoblauchzehen
  • 3 EL Olivenöl
  • 100 ml sherry
  • 1 EL Zitronensaft
  • Salz
  • Pfeffer (aus der Mühle)
  • 1 Handvoll Thymian

Instructions

    Clean the mushrooms and halve larger ones. Peel the garlic cloves. Heat the oil in a pan and press the garlic into it. Sauté briefly, then add the mushrooms and cook over medium heat for 5-8 minutes while stirring. The mushrooms should still have a slight bite. Deglaze with Sherry, remove from heat, and season heavily with lemon juice, salt, and pepper. Rinse the thyme, shake dry, pluck the leaves, roughly chop, and mix into the mushrooms. Cover and refrigerate for at least 2 hours.
