Cauliflower Soup with Orange Zest

Ingredients
- 750 g cauliflower (1 head)
- 1 onion
- 1 tbsp Olive Oil
- 750 ml vegetable broth
- 200 ml heavy cream
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 2 tbsp Orange juice
- 1 tbsp chopped parsley
- 2 tbsp orange oil
- 2 tbsp crème fraîche
- orange zest
- chopped parsley (for garnish)
Instructions

Wash the cauliflower and cut into florets. Peel and dice the onion. Heat the olive oil in a pot, sauté the cauliflower and onions while stirring. Add the broth, bring to a boil, then simmer gently for about 20 minutes. Purée the mixture, stir in the cream, return to a boil, season with salt, pepper, and nutmeg, and finish with orange juice and parsley.

Serve the soup in bowls, drizzle 1 tsp orange oil around each bowl, add a dollop of crème fraîche, and sprinkle with orange zest and herbs.
