Ingredients

  • 250 g carrots
  • 200 g honey
  • 6 egg yolks
  • 4 tbsp water
  • 6 egg whites
  • 1 pinch salt
  • 100 g flour
  • 1 tsp Baking powder
  • 200 g grated hazelnuts
  • butter
  • 2 untreated oranges
  • 0.375 l whipping cream
  • 1 packet vanilla sugar
  • 150 g whole hazelnuts

Instructions

    Peel, wash carrots and grate finely into strips. Beat egg yolks with water and honey until creamy. Whip egg whites with salt very stiff. Mix flour with grated hazelnuts and baking powder and stir into the yolk mixture. Fold in the meringue, add carrots and gently fold everything together.

    Grease a 26 cm springform well and spread the batter inside. Bake at 180°C for 50 minutes. Let it steam in the pan, then pour out, cool, and cut crosswise. From the oranges tear off zest, peel away white skin, and fillet the fruit flesh.

    Whip cream very stiff, fold in orange fillets and spread on a cake base, cover with the other half. Slice whole hazelnuts into thin slices, distribute over the cake, and decorate with orange zest.
