Carrot Salad with Apple, Radish and Almonds

Ingredients
- 4 medium carrots
- 2 Apples
- 1 white daikon radish
- 50 g almond slivers
- white grapes
- 1 piece ginger (3 cm)
- Salt
- ground pepper
- 2 lemons
- 3 tbsp almond oil
- 0.5 tsp Sugar
- 4 tbsp cold water
- 2 stalks fresh coriander

Peel carrots and slice into rounds. Wash apples, quarter them, remove the core and cut into wedges. Drizzle apple wedges with lemon juice. Peel radish, grate it and lightly salt. Grate ginger finely (remove any long fibers left after grating). Make a vinaigrette by whisking almond oil, juice of one lemon, water, ginger, sugar, salt and pepper.

Toast almond slivers in a dry pan until lightly browned. Wash and halve a few white grapes. Arrange carrots, apple wedges and radish on four small plates. Drizzle the vinaigrette over the salads, sprinkle with toasted almonds and garnish with grapes and coriander leaves.
