Ingredients
- 500 g carrots
- 250 g walnuts (chopped)
- 250 g whole wheat flour
- 2 tsp Baking powder
- 2 tsp Cinnamon
- 200 g raisins
- 400 g cane sugar
- 4 eggs
- 250 ml germination oil
- 200 g Cream cheese
- 200 g powdered sugar
- 75 g soft butter
- 0.5 tsp ground vanilla

Peel and grate the carrots. In a bowl combine flour, baking powder, cinnamon, sugar, and raisins.

Beat the eggs until fluffy, then gradually fold in the oil. Mix the egg mixture with the carrot blend. Spread the batter onto a greased deep baking sheet and smooth the surface. Bake at 180°C for about 45–50 minutes. Remove and let cool on the sheet.

For the cream, whisk together cream cheese, powdered sugar, butter, and vanilla until light and fluffy. Spread the cream loosely over the cooled cake.
