Carrot and Potato Medley

The carrot and potato medley from Spoonsparrow is a true comfort food for all ages!

Ingredients

  • 400 g mostly waxy potatoes
  • 3 carrots (100 g each)
  • 100 ml Vegetable broth
  • 2 tbsp oat drink (oat milk)
  • Salt
  • ½ handful parsley

Instructions

    Peel, wash, and cut the potatoes and carrots into small pieces. Cook both in a pot with vegetable broth over medium heat for about 10 minutes until tender.

    Add oat drink and season with a little salt. Then mash the carrots and potatoes roughly.

    Wash the parsley, shake off excess water, pluck the leaves, and finely chop. Sprinkle the carrot and potato medley with parsley and serve warm.
