Carrot and Orange Soup

Ingredients
- 1 onion
- 6 carrots
- 1 potato
- 2 oranges
- parsley
- Salt
- 1 tsp butter
- 600 ml Vegetable Broth
- 40 g crème fraîche (2 tbsp)
- Cayenne pepper
- black pepper
Instructions

Peel and dice the onion. Peel and grate the carrots and potato. Wash the oranges hot, pat dry, grate the zest and squeeze out the juice. Wash the parsley, shake dry, pluck the leaves and chop.

Heat butter in a pan and sauté the onion over medium heat. Add the carrots and potato, season with salt, cover and simmer for about 5 minutes. Add vegetable broth, orange zest, cover and let simmer for another 10 minutes over low to medium heat.

Blend the soup with an immersion blender, add orange juice and crème fraîche. Season with salt and cayenne pepper. Serve in bowls, sprinkled with parsley and a pinch of black pepper.
