Ingredients

  • 400 g beef fillet from the midsection (trimmed)
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 200 g Goat cheese
  • Salt
  • Pepper
  • 1 handful Arugula

Instructions

    Rinse the beef fillet, pat dry, wrap first in plastic wrap then in aluminum foil. Twist the ends tightly. Freeze for about 30 minutes to firm up. Unwrap and slice thinly with a deli slicer or sharp knife. For ultra-thin slices, lightly oil the back of the knife and press flat.

    To plate the delicate slices, whisk olive oil with lemon juice and brush each plate with some lemon oil. Arrange the beef slices overlapping slightly on the oiled surface. Dice the cheese and scatter over the meat. Drizzle remaining lemon oil and season with salt and pepper.

    Wash, trim, and dry the arugula. Arrange it atop the carpaccio and serve immediately.
