Ingredients

  • 500 g double-purpose flour
  • 1 cube yeast (42 g)
  • 1 tsp salt
  • a pinch sugar
  • 250 ml lukewarm water
  • 400 g diced canned tomatoes
  • 400 g buffalo mozzarella
  • 1 handful fresh basil
  • freshly ground pepper
  • Salt
  • extra-virgin olive oil
  • 60 g freshly grated Parmesan

Instructions

    Pour the flour onto a work surface and create a well with your hand. Crumble the yeast into it and sprinkle with sugar. Add a little lukewarm water, stir, and let rise for about 15 minutes. Then knead with salt and the remaining lukewarm water into a smooth dough. If the dough is too soft, add more flour; if it's too firm, add a bit more water. Cover the dough and let it rise in a warm, draft-free place for about 45 minutes.

    Preheat the oven to 220°C (425°F) with fan. Brush an oiled pizza tray with olive oil.

    Dust the work surface with flour, divide the dough into quarters, roll each out with a rolling pin, and press into the pizza tray, forming a rim. Spread tomato sauce over the base, top with sliced mozzarella, season with salt and pepper, drizzle with olive oil, sprinkle Parmesan, and scatter basil leaves on top. Bake in the oven for about 25 minutes until golden and bubbly.
