Ingredients

  • 1 handful Arugula
  • 200 g canned crab meat
  • 250 g ricotta
  • 1 tsp lemon zest
  • 100 g crème fraîche
  • 200 g grated parmesan
  • Salt
  • pepper (ground)
  • 12 cannelloni
  • 250 ml Whipping Cream

Instructions

    Preheat the oven to 180°C fan.

    Wash, dry and chop the arugula; set aside 1-2 tbsp for garnish. Mix the remaining arugula with drained and finely torn crab meat, ricotta, lemon zest, crème fraîche and half of the Parmesan; season with salt and pepper. Fill the cannelloni and place in a baking dish. Combine the cream with the remaining Parmesan, pour over the pasta, and bake in the oven for 25-30 minutes until golden brown. Sprinkle with the remaining arugula before serving.
