Cake Pops

Spoonsparrow cake pops are a wonderful snack for afternoon coffee.

Ingredients

  • 75 g butter
  • 75 g sugar
  • 2 Eggs
  • 150 g flour
  • 1.5 tbsp matcha tea powder
  • 1 tsp Baking powder
  • 4 tbsp milk
  • 60 g Butter
  • 30 g powdered sugar
  • 60 g plain cream cheese
  • 200 g white couverture chocolate
  • food coloring (optional)
  • colorful sprinkles

Instructions

    Preheat the oven to 180°C (350°F) with top and bottom heat. Line a springform pan with parchment paper.

    Cream the butter and sugar together, then gradually beat in the eggs. Mix the flour with matcha powder and baking powder, then alternately fold into the butter mixture with milk. Pour the batter into the prepared pan, smooth the surface, and bake for about 30 minutes. Remove from oven, let cool, then crumble into a bowl.

    Whisk the butter with powdered sugar until pale and creamy, then gradually stir in the cream cheese.

    Knead the cake crumbs into the butter mixture and shape into small balls. Cover and refrigerate for about an hour.

    Chop the chocolate roughly, melt it over a gentle steam bath (not boiling), and let cool slightly. Color as desired with food coloring. Insert lollipop sticks into each ball, dip in melted chocolate, allow excess to drip off, then roll in sprinkles if desired. Let set and serve in a glass jar lined with green stones.
