Caesar Salad with Croutons

Ingredients
- 3 slices of toast bread
- 100 g bacon
- 100 ml olive oil
- 1 large romaine lettuce
- 1 Garlic clove
- 1 tsp lemon juice
- 0.5 tsp sharp mustard
- 1 tsp Worcestershire sauce
- 1 egg yolk
- 2 tbsp heavy cream (optional)
- Salt
- Pepper (freshly ground)
- a pinch of sugar
- 2 Tbsp grated Parmesan

Remove the crust from the bread, then cut into about 1 cm cubes. Dice the bacon finely and fry in 2 tbsp hot oil in a pan. Remove and drain on kitchen paper. In the bacon fat, brown the toast cubes until golden and drain again.

Clean, wash, and thoroughly dry or spin the romaine lettuce. Tear the leaves into smaller pieces.

Peel the garlic and combine with the remaining oil, lemon juice, mustard, 1 tsp Worcestershire sauce, and egg yolk in a blender; blend to a creamy consistency. Season with salt, pepper, and sugar, thinning with water or cream if desired.

Toss the romaine lettuce with the dressing and serve on bowls. Sprinkle with croutons and bacon, garnish with Parmesan, and serve.
