Ingredients

  • 8 large savoy cabbage leaves
  • 2 shallots
  • 1 Garlic clove
  • 5 tbsp olive oil
  • 400 g pork mince
  • 50 g grated Parmesan
  • 1 egg
  • bread crumbs
  • Salt
  • ground pepper
  • 200 ml stock
  • 50 ml red wine
  • sauce thickener
  • 12 medium potatoes
  • 0.5 bunch Chives

Instructions

    Blanch the cabbage leaves in plenty of boiling salted water for about 3 minutes, drain, rinse with cold water and let them dry.

    Peel and finely chop the shallots and garlic; sauté in 1 tbsp oil until translucent, then mix with pork mince and Parmesan. Add egg, 2 tbsp oil, pepper, a pinch of salt, and enough bread crumbs to make the mixture workable.

    Peel the potatoes and cook in plenty of salted water for about 25 minutes until tender.

    Trim the thick ribs of the cabbage leaves slightly, spread the filling on them, fold in the edges, roll up, tie with kitchen twine, and brown in the remaining oil. Pour in stock and wine, then simmer covered for 30-40 minutes.

    Remove the cabbage rolls from the sauce, thicken it with a sauce thickener, and serve the rolls with potatoes and a garnish of chives on plates.
