Butter Rings

Ingredients
- 250 ml milk
- 100 g butter
- 2 tbsp sugar
- 1 packet vanilla sugar
- a pinch of salt
- 150 g flour
- 4 eggs
- 750 g clarified butter (for frying)
- powdered sugar (for dusting)
- 150 g powdered sugar
- 2 tbsp lemon juice

Heat the milk, butter, salt and sugar, bring to a boil once, add the flour and stir carefully. Continue cooking the dough over low heat until it forms a lump. Transfer to a bowl and gradually fold in the eggs until the dough is very smooth.

Cut baking paper into 20 cm squares and brush with butter. Fill a piping bag fitted with a star tip with puff pastry dough and pipe rings onto the paper pieces.

Heat clarified butter in a tall pot until bubbles form on a wooden stick. Turn the paper pieces over and hold them above the hot fat, letting the rings slide in. Fry each portion for about 4 minutes per side until golden brown. Remove individually with a slotted spoon and drain on kitchen paper.

Whisk powdered sugar and lemon juice into a thick glaze and brush the rings with it using a pastry brush.
