Ingredients

  • 600 g Brussels sprouts
  • Salt
  • 1 baguette
  • 2 Garlic cloves
  • 50 g soft butter
  • 1 tbsp freshly chopped parsley
  • 200 g cocktail tomatoes
  • 1 onion
  • 600 g beef (e.g., loin or round)
  • 2 tbsp Vegetable oil
  • black pepper (ground)

Instructions

    Preheat the oven to 180°C (356°F) with fan and top heat.

    Clean the Brussels sprouts and boil in salted water for about 10 minutes until firm, then drain and let dry well.

    Cut the baguette diagonally but do not cut all the way through. Peel the garlic, squeeze one clove, mix with butter and parsley, season with salt. Spread the garlic butter into the cuts and bake on a rack for about 5 minutes in the oven.

    Wash and halve the tomatoes. Peel the onion and finely dice it together with the remaining garlic clove. Rinse the beef and cut into strips. Briefly sauté the onion with garlic in hot oil in a large pan, then add the beef and fry for 3-4 minutes until browned. Season with salt and pepper. Add the Brussels sprouts and tomatoes, let them heat through, taste, and serve with the garlic baguette.
