Ingredients

  • 100 g uncooked sticky rice
  • 100 ml unsweetened coconut milk (canned)
  • 0.5 tsp Salt
  • 1 broccoli head
  • 50 g almond slivers
  • 3 tbsp white wine vinegar
  • Salt
  • white pepper

    Soak sticky rice overnight for about 12 hours in cold water. Drain well in a sieve. Place the sticky rice with coconut milk and salt in a pot, add enough water so that the water level is about 1 cm above the rice. Bring to a boil, then cover and simmer over low heat for about 20 minutes until the liquid is fully absorbed by the rice. Let the rice cool with the lid open.

    Wash the broccoli, cut into florets and blanch in boiling salted water for 6 minutes. Lightly toast the almond slivers. Drain the broccoli, mix with vinegar and toasted almonds, and arrange on plates. Form balls from the sticky rice and serve alongside the broccoli on plates.
