Ingredients

  • 200 g broccoli
  • 250 g waxy potatoes
  • 1 Carrot
  • 150 g celery root
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 0.5 tsp Fennel seeds
  • 0.5 tsp shrimp paste
  • 40 ml Noilly Prat
  • 800 ml vegetable broth
  • Salt
  • Lemon juice
  • Cayenne pepper
  • 200 g cocktail shrimp
  • 1 tbsp freshly chopped parsley (for garnish)

    Wash, trim and cut the broccoli into pieces. Peel and dice the potatoes, carrot, celery root, onion and garlic. Sauté the prepared vegetables in hot oil for 1-2 minutes. Add the fennel and shrimp paste, deglaze with Noilly Prat and broth, and simmer gently for about 20 minutes. Puree the soup finely and strain through a sieve, pressing the vegetables well to achieve smoothness. Bring the soup back to a boil and let it reduce slightly if desired or add more broth. Season with salt, lemon juice and cayenne pepper. Allow the shrimp to heat through in the soup.
