Broccoli Soup with Sesame Bread

Ingredients

  • 500 g broccoli
  • 100 g waxy potatoes
  • 1 Shallot
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 600 ml Vegetable Broth
  • 2 slices white bread
  • 2 tbsp sesame seeds
  • 100 g crème fraîche
  • Salt
  • 1 tbsp Lemon Juice
  • black pepper (freshly ground)

Instructions

    Wash, trim and cut the broccoli into small florets. Peel and dice the stalk. Peel and dice the potatoes. Peel and finely chop the shallot and garlic clove. Sauté both in 1 tbsp hot oil, then add the potatoes and broccoli and deglaze with broth. Let simmer gently for about 15 minutes.

    Cut the bread into strips, brush with olive oil and press into sesame seeds. In a hot pan roast until golden brown and crisp. Remove from the pan and let cool.

    Take some broccoli florets from the soup and arrange them as garnish on preheated soup bowls. Puree the remaining soup finely, simmer if needed to reduce or add more broth. Stir in the crème fraîche and season with salt, lemon juice and pepper. Ladle into the bowls and serve with the crunchy bread.
