Ingredients
- 1 Shallot
- 1 Garlic clove
- 2 tbsp olive oil
- 300 g broccoli florets
- 600 ml Vegetable Broth
- 80 g basil
- 3 tbsp crème fraîche
- Salt
- Pepper (freshly ground)
- a splash of lemon juice

Peel and finely chop the shallot and garlic. Sauté in hot oil until translucent, then add the broccoli florets and deglaze with the broth. Simmer for about 20 minutes. Afterwards, add the basil leaves that have been drained (reserve some for garnish) and blend the soup until smooth.

Stir in the crème fraîche, bring to a second boil, and season with salt, pepper, and lemon juice. Serve garnished with basil leaves.
