Broccoli Almond Soup

Ingredients
- 1 small onion
- 1 Garlic clove
- 1 broccoli head
- 2 basil stems
- 600 ml Vegetable Broth
- 40 g almond slivers (4 tbsp)
- 0.5 Organic lemon
- 200 g herb cream cheese (0.2% fat)
Instructions

Peel and finely chop the onion and garlic. Wash, trim, cut the broccoli into florets, peel and finely chop the stem. Rinse the basil, shake dry and pluck the leaves.

Heat the broth in a pot, add the broccoli, onion and garlic, and simmer gently for 6 minutes.

Meanwhile, toast the almonds in a dry pan until golden brown. Wash the lemon hot, pat dry and zest the peel.

Take some broccoli florets from the pot, shock them with cold water and set aside; cook the rest for another 3 minutes. Then stir in basil and cream cheese and blend everything finely.

Serve the soup in four bowls and garnish with the reserved broccoli florets, almonds and lemon zest.
