Ingredients

  • 1 cucumber
  • 2 untreated oranges
  • 50 g smoked ham
  • 2 tbsp white wine vinegar
  • 4 tbsp Vegetable oil
  • 1 pinch sugar
  • Salt
  • ground pepper
  • 2 tbsp freshly chopped dill
  • 4 veal cutlets (e.g., from the top loin), about 140 g each

  • 3 tbsp horseradish (jarred)
  • 2 Eggs
  • 2 tbsp heavy cream
  • 3 tbsp Flour
  • 100 g breadcrumbs
  • 50 g clarified butter

Instructions

    Wash the cucumber, trim the ends, halve lengthwise and slice. Peel the oranges thoroughly and filet them, catching the juice and squeezing out the remaining flesh. Dice the bacon finely and crisp it in a pan without oil; drain on kitchen paper. For the dressing whisk orange juice with vinegar and oil, seasoning with sugar, salt, and pepper.

    Pat each cutlet flat, lightly season both sides, and spread horseradish on one side. Whisk eggs with cream. Dredge the meat in flour, dip in the egg mixture, then coat with breadcrumbs, pressing gently to adhere.

    Brown the schnitzels in a large pan over medium heat for about 1–2 minutes per side until golden brown; drain on kitchen paper.

    Combine orange fillets, bacon, dill, and cucumber into the dressing and adjust seasoning. Plate the schnitzels atop the salad and serve.
