Ingredients
- 4 small lamb shanks (about 300 g each)
- flour (for dusting)
- 2 carrots
- 0.25 head of knollensellerie
- 3 stalks of celery
- 600 g tomatoes
- 3 onions
- 3 Garlic cloves
- 3 tbsp olive oil
- 125 ml lamb stock (glass)
- 125 ml dry red wine
- Salt
- Pepper (freshly ground)
- 2 tsp chopped rosemary
Instructions

Clean, wash the vegetables; peel carrots and celery, then dice everything into small cubes and crush the garlic.

Season the lamb shanks with salt and pepper, dust them in flour, and sear each side in hot oil in a roasting pan until golden brown, then remove from the pan.

Sauté the vegetables in the remaining fat, pour in wine and stock, season with salt and pepper, and add rosemary.

Return the meat to the vegetable mixture, cover with vegetables, and simmer covered for about 1½ hours.

Plate the lamb shank slices with the vegetable sauce and garnish with rosemary.
