Boiled Eggs with Sour Cream, Caviar and Smoked Salmon

Ingredients
- 8 eggs
- 1 tbsp sour horseradish (jar)
- 2 tbsp butter
- 4 tbsp Sour cream
- 1 tbsp chives curls
- 50 g caviar
- 75 g smoked salmon
- Salt
- ground pepper
- lemon zest for garnish
Instructions

Cut off the upper third of each egg with a saw knife and pour the yolk into a bowl. Clean the shell edges, remove any shards, and rinse.

Stir the horseradish into the yolks and season with salt and pepper. Cook in hot butter while stirring until thickened. Remove from pan and let cool, stirring occasionally. Then fold in 2 tbsp sour cream and chives (reserve some curls for garnish) and fill the shells. Spread remaining sour cream on half of the eggs, top with caviar and chives. Add the remaining chopped salmon and garnish with lemon zest before serving.
