Blue Cheese and Onion Meatballs

Ingredients

  • 4 Scallions
  • 1 tbsp Olive Oil
  • 100 ml red wine
  • 50 g blue cheese
  • 1 day‑old roll (loaf)
  • 500 g mixed ground meat
  • 1 egg
  • 1 tsp paprika powder
  • 1 tsp sharp mustard
  • 2 tbsp freshly chopped herbs (parsley, thyme, rosemary)
  • Salt
  • Pepper (freshly ground)
  • oil for frying

Instructions

    Peel the scallions and cut into rings. In hot oil sauté slowly until translucent, deglaze with red wine, and simmer gently for about 10 minutes until the wine has almost evaporated.

    Soak the roll in a little water, then squeeze out excess liquid and mix with ground meat, egg, paprika powder, mustard, and herbs in a bowl to form a dough. Season well with salt and pepper. Shape into eight meatballs and fry in hot oil for about 3 minutes on each side until golden.

    Plate the meatballs, sprinkle crumbled blue cheese over them, and top with the sautéed scallions. Serve with mashed potatoes if desired.
