Black Forest Cherry Cake

Ingredients
- 6 egg yolks
- 6 egg whites
- 180 g sugar
- 1 packet vanilla sugar
- 80 g flour
- 60 g cornstarch
- 60 g cocoa powder
- 750 g whipping cream
- 2 packets stabilizer
- 50 g sugar
- 400 g canned cherries (jar; set aside 12 for garnish)
- 4 tbsp cherry brandy
- Chocolate shavings (for garnish)

Grease the bottom of a springform pan.

Whisk the egg yolks with half the sugar and vanilla sugar until frothy.

Beat the egg whites into stiff peaks, adding the remaining sugar before they become fully stiff; continue whisking until stiff.

Fold the meringue into the yolk mixture using a spoon.

Sift flour, cocoa powder, and cornstarch over the mixture and fold in gently.

Pour the batter into the prepared pan, smooth the top, and bake at 180°C for about 30 minutes (check with a toothpick).

Remove the finished base from the oven, let it cool slightly, then carefully loosen it from the sides of the pan with a thin knife, transfer to a wire rack, and allow to cool completely.

Cut the cake in half horizontally twice.

Whip the cream with stabilizer and sugar. Set aside one-third for brushing and garnish.

Drizzle some cherry brandy over the bottom layer, top with cherries, and spread one-third of the whipped cream over it. Place the second layer on top, drizzle more brandy, and spread another third of the cream. Add the final layer and fill the sides with the remaining cream, decorating as desired with a piping bag. Garnish with extra cherries and chocolate shavings.
