- 24 herrings (filleted)
- 0.75 l cold water
- 0.75 l herb vinegar (5% acidity)
- 3 tbsp salt (no iodized salt!)
- 6 tbsp sugar (adjust to taste; use less if you prefer a slightly more sour flavor)
- 1 pinch of fish seasoning
- ground pepper
- 1 carrot (sliced)
- 0.5 celery root (sliced)
- 1 onion
