Berry Puff Pastry Squares

Ingredients
- 400 g puff pastry (frozen)
- 1 egg yolk
- baking paper
- dried legume
- 300 g mixed berries (e.g., strawberries, blueberries, raspberries, blackberries)
- 1 tbsp Pistachios

Let the puff pastry thaw while lying flat. Brush the sheets lightly with water, stack them, and roll into a rectangle about 25 x 40 cm. Trim strips of about 2.5 cm from each edge. Brush the border of the dough rectangle with egg yolk and place the strips as a frame around the edge, pressing them down. Brush again with egg yolk, then prick the dough several times with a fork. Line the bottom of the dough rectangle with a piece of baking paper cut to fit, weight it with dried legumes, and bake in a preheated oven at 225°C for about 20–25 minutes until golden yellow. Remove, discard the legumes and baking paper, and let cool.

Wash, rinse, and pat dry the berries, then spread them over the puff pastry along with pistachios.
