Ingredients

  • 4 small cooked beetroot
  • 0.5 cucumber
  • 300 g mozzarella
  • 3 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 1 tbsp chopped mixed herbs
  • Salt
  • ground pepper
  • 1 tsp sugar
  • 1 tsp Mustard
  • parsley for garnish

Instructions

    Peel beetroot and slice into 3 mm thick rounds. Wash cucumber and shave into thin ribbons. Drain mozzarella and cut into 5 mm thick slices.

    Whisk vinegar, oil, mustard, sugar, salt, pepper and herbs to make a dressing. Layer beetroot, cucumber ribbons, and mozzarella on salad plates and drizzle with the vinaigrette. Garnish with parsley before serving.
